Chimayo is another chili from New Mexico, but it's unique. It is not commercially produced in mass, but is more commonly cultivated in individual houses and gardens, making them unpredictable and un- conformable, in the good sense. The length can vary from 4-7 inches, even from the same plant, and the shape could be straight and thin or folded and curled. Chimayo has grown throughout northern New Mexico for so many generations that it is commonly called "native Chile" and seeds are often passed from parents to children. They are almost ceremoniously exchanged, often as a gift, or during their visit to a relative.
